In the tapestry of aromatic beverages, few can rival the timeless charm of chai, with its rich blend of spices and tea leaves, chai is more than just a drink – it's a journey through flavors, cultures, and warmth.

Literally the symbol of welcoming visitors to our homes as well as something to warm your insides as you await a hearty meal and so much more.

In this article though, I'll be teaching you how to blend a more exotic cup of chai besides the usual boiled tea leaves we're used to.

The Symphony of Ingredients:

Chai in Kenya is a harmonious blend of black tea and milk each playing a note that resonates with the soul.

However, the spices are where the magic happens – cinnamon, cardamom, cloves, and ginger come together in a medley that echoes Kenya's diverse culture.

The Dance of Preparation:

Water and Milk Embrace:

In a sufuria (saucepan), pour equal parts of water and milk – a dance between the land and its people. Watch as they twirl together, creating a creamy base that holds the essence of Kenya's rich landscapes.

As the liquid warms, introduce the spices. Crush the cardamom pods, slice the ginger, and let the cloves and cinnamon sticks infuse the liquid.

As the liquid reaches a gentle boil, add the globally celebrated robust flavourful Kenyan tea leaves. Let them steep for 5 minutes, absorbing the spice.
